Hers my take  on some of this:

Organic does not mean "only grass." Organic can be grain fed- but just using organic grains. 

Natural - in my mind- would be grassfed only.  No grains. Maybe think hunting wild game, or managing a grazing herd of cattle. Not adding to them, but keeping them fed and healthy until harvesting. 

Grass fed animals are  not malnourished.  Compare the livers of a grain vs grass finished beef (usually grain finished have condemned livers because bovine arent meant to eat grains.) Grass fed livers are as clean as they come.

Regarding the pork and poultry, they might be able to go outside, but I really doubt it. I believe the organic farmers require this, maybe I'm wrong.  But nothing is force fed,  animals are always allowed to eat as they please. 

This isn't a rant post as much as it is an information post.  I still get a lot of questions regarding  labelling. 

The second picture is of a grassfed and finished herd. Malnutrition is not a factor. Ever.

The menu was tastings of beef tartare (used tenderloin), beef bacon (used the plate), and beef sticks (pepperettes).

A highlight for me was listening to the students; where they were from and what direction they are going in.
